Karla's Famous Oatmeal Pancakes*

 ¼ cup for each pancake  =  1 POINTS PLUS Value  each

Mix together:

2 cups lo-cal buttermilk

2 cups old fashioned oats

2 eggs

¼ cup melted butter

Vanilla about ½ - 1 teaspoon   (you choose)

Sift together:

 ½ cup flour

2 Tablespoons sugar

½ teaspoons salt

1 teaspoon baking powder

1 teaspoon baking soda

Cinnamon about ½ teaspoon (you choose)

Let it stand about 5 minutes.  Use a ¼ cup measure to make pancakes.

 

Muffins

1.5 points each

Mix together

3 cups All Bran sticks

2 1/2 cups water

add

1 box(dry) Krusteaz Fat-free muffin mix

Bake as directed on the box.

Makes 18 muffins

 

Breakfast Egg Foo Yung4 points

Heat 1 tsp canola oil in medium nonstick skillet over medium heat.  Add 1 small finely chopped garlic clove, 1 small grated carrot, and 2 thinly sliced scallions.  Cool, stirring, until vegetables are tender, about three minutes.  Stir 1/4 cup egg substitute, 1/2 cup leftover cooked brown rice, and 1/8 tsp black pepper together in small bowl.  Add egg mixture to skillet and cook, stirring 1 minute.  Cover and cook until egg is set and rice is heated through, abut 2 minutes longer.  Sprinkle with soy sauce.

 

Teresa's Breakfast Cookies 

Makes 36

2 points each ;^)

Combine:

2 cups wheat bran

1 cup whole wheat flour

½ cup ground flax seed

1 cup whole oats

1 cup brown sugar

1 tsp baking soda

1 tsp baking powder

½ tsp salt

1 tsp cinnamon

Mix:

¼ cup canola oil

1 egg

1½ skim milk

1 cup plain low-fat yogurt

1 cup unsweetened apple sauce-drained in a coffee filter/paper towel

   Pour the wet ingredients over the dry ingredients.  Stir in the dried fruit and nuts.

1 cup dried cranberries

1 cup raisins

1 cup chopped walnuts

Bake at 400 for 10 minutes.  I use a silicone baking mat.

The mixture may look wet but it will bake up moist. 

These freeze beautifully.

 

Spinach Quiche "Frittata" Muffins

(Trude Wed am)

16 muffins    2 points each

1 ¾ cups fat-free milk, divided use

2 eggs

½ cup egg substitute or egg beaters

½ cup flour

½ tsp salt

1/8 tsp white pepper

1/8 tsp nutmeg

1 ½ cups Kraft Fat-Free shredded cheese

1 10 ounce box chopped spinach, thawed and squeezed of excess moisture

½ cup shredded Kraft reduced fat parmesan cheese

Preheat 350 Spray muffin tins with Pam (garlic flavored is delicious)

Beat 1¼ cup milk with eggs, egg substitute, salt, pepper and nutmeg'

Stir in flour=paste.  Beat paste into egg mixture.  Stir in spinach and cheesed.

Fill muffin cups with ¼ cup batter.

Cook 20-25 minutes. Begin checking at 12 minutes.

Cool. Freeze in zip-loc baggies, 2 to a bag.
Microwave 1 ½ -2 minutes

 

Blueberries & Cream Baked Oatmeal
Serves: 8, Points Value 2 per serving

Note:  ½ cup Egg Beaters = 2 whole eggs,

Using 2 eggs will increase to 3 points per serving

 2 Cups uncooked Quick Oats (Oatmeal)
1 1/2 tsp. baking powder
1/2 tsp. salt
1 Small box sugar-free/fat-free Vanilla Pudding Mix
1/3 Cup of Splenda
1 Cup Fat Free Milk
1/2 Cup Egg Beaters (OR use 2 whole eggs)
1/2 Cup unsweetened applesauce
1 Cup fresh (or frozen) Blueberries
4 0z. Fat Free Cream Cheese, cubed small

PREHEAT your oven to 350 degrees
Mix dry ingredients together.

Add applesauce, egg beaters, milk and applesauce to dry mixture.

Mix until combined.
Add blueberries and the small cubes of cream cheese.

Pour into 9" square pan.

Bake for 30-35 minutes

 Omelet in a Bag Recipe2 eggs or equivalent egg substitute in a zip lock FREEZER bag. Add anything you want to it, Cheese, onions anything, No butter no milk.
Boil for 13 min.

 

Magic Muffins  

This is from Liz, 9 am Saturday meeting.           

Makes 24 muffins Each muffin @ 1.25 points  

4 eggs (can be made with 1 cup egg substitute, but don't bake as fluffy)

2 tsp vanilla

2 c carrots, grated  

*FLAVOR OPTION  

1 1/3 c non fat milk powder

¾ c flour

1 tsp baking soda

1 tsp baking powder

2 tsp cinnamon  

Beat eggs and vanilla together well. Add carrots. Mix remaining ingredients together.  

Bake at 350 degrees for 25 minutes in sprayed muffin pan, until knife comes out clean.  

*FLAVOR OPTIONS:   Pumpkin:       1 16 oz can pumpkin 20 packets sugar substitute - 2 Tbsp equivalent 1 c raisins 5 tsp pumpkin pie spice  

Applesauce:  1 c applesauce                         2 finely diced apple                         2 tsp allspice                         20 packets sugar substitute  

Banana:         2 mashed bananas                         12 packets brown sugar Twin.

 

 Artichoke and Red Pepper Frittata

POINTS® Value: 4
Servings:  4
Preparation Time:  20 min
Cooking Time:  16 min

  • 1 sprays cooking spray, or enough to coat skillet
  • 1 medium onion(s), peeled and chopped
  • 1 medium potato(es), red, cooked, peeled and sliced 1/4-inch thick
  • 6 oz canned artichoke hearts, without oil, about 1 cup, coarsely chopped
  • 1 cup roasted red peppers, about 8 pieces, coarsely chopped
  • 1/2 tsp dried oregano
  • 1/2 tsp table salt
  • 1/2 tsp black pepper
  • 6 large egg white(s)
  • 2 large egg(s)
  • 1/2 tsp red pepper flakes, crushed
  • 1/2 cup hard cheese, Asiago, grated
  • Heat a 10-inch nonstick, ovenproof skillet coated with cooking spray over medium heat.
  • Add onion and sauté. Add potatoes, artichokes and peppers. Sauté 2 minutes, stirring occasionally.
  • In a bowl, beat together red pepper flakes, oregano, salt, pepper, egg whites and eggs. Pour over vegetable mixture. Cook over medium heat until eggs begin to set, about 5 minutes. Gently lift egg mixture to let uncooked egg portion run to bottom of skillet. When almost set, sprinkle with cheese.
  • Place skillet under broiler 3 to 4 inches from heat until cheese melts, 1 minute. Cut into 4 wedges.

 

Pumpkin Muffins- These are 1/2 point per muffin. You make them in muffin tins without paper liners.  Use cooking spray in the tins or the muffins will stick.  This recipe makes 24 little muffins.
1 tsp vanilla
2/3 powdered milk
2 eggs
4 Tbs raisins
1 cup pumpkin
1 1/2 grated carrots
1 tsp cinnamon & pumpkin pie spice
6 Tbs flour
1 Tbs baking powder
Bake at 350 for 20 minutes

 

Apple Breakfast Cake

1 box (17.4 ounces) bran muffin mix
1 egg, beaten
1/4 cup light whipped butter
1 1/4 cups fat-free milk
1 apple, peeled and finely diced (Macintosh or Rome Beauty recommended)
cooking spray

 Instructions:

  • Preheat oven to 350°F.
  • Place muffin mix in a large bowl. Add any flavoring mixes that come with the product (some packages have added raisins or apples).
  • In a small bowl, beat together egg, butter and milk; add to muffin mix. Stir in apple. (Do not beat.)
  • Coat an 8-inch square pan with cooking spray. Spoon batter in pan and bake for 45 minutes or until cake is completely done in the center. Remove from oven, cut into 12 pieces and serve.

Breakfast Bars

Hearty bar cookie for a quick, easy breakfast. May freeze, reheat

1 tsp canola oil

1/4 cup fat-free skim milk

1 1/2 cups whole wheat flour

1 cup quick cooking rolled oats

1/4 cup ground flax seed meal

2 Tbsp SPLENDA No Calorie Sweetener

1 tsp baking powder

1/2 tsp table salt

1/2 tsp ground nutmeg

1 tsp ground cinnamon

1 cup carrots, finely grated

1/2 cup apple, grated

1/2 cup walnut halves, chopped

1/2 cup General Mills Fiber One cereal

1 cup Member's Mark 7-Fruit Blend dried fruit, chopped*

            *available at Sam's Club, Member's Mark 7-fruit blend is diced apricots, tart cherries, cranberry halves, Zante currants, diced pineapple, blueberries, and raspberries

Canola oil cooking spray


 Instructions

In large mixing bowl, mix eggs, oil and milk.

In another bowl, mix dry ingredients together: flour, oats, flax seed meal, Splenda, baking powder, salt, nutmeg, and cinnamon.

Add dry mixture to egg mixture and blend at medium speed with mixer.

Slowly add grated carrots and apple, chopped walnuts and dried fruit, and Fiber One cereal.  Mix until well-moistened.  Batter will be thick.

Spray a 9 x 13 baking pan with nonstick spray. Spoon mixture into baking pan and smooth top with back of metal spoon.

Bake at 350 degrees for 30 minutes or until a toothpick test comes clean.
